Soya Upma

Ingredients:

Soya (soaked in water) : 3/4 cup
Carrot : 1/2 (Cut into length wise)
Cabbage : 3/4 cup
Onion : 1/2 (finely chopped)
Green chillies :2
Mustard Seeds :1/2 tsp
Urad dal :2 tsp
Ginger (finely chopped) :1/2 tsp
cumin seeds :1/2 tsp
salt : to taste
oil :1 tsp
Lemon juice : 1 tsp
Coriander leaves - for garnishing

Method:

Heat oil in a pan, then add mustard seeds & cumin seeds. Let them crackle.
Then add ginger & urad dal. Wait until the dal turns into light brown.
Then add onion & fry.
Add carrot, cabbage, green chillies & salt and saute well.
At this stage add the soaked soya & saute for few minutes.
While serving, squeese a lemon & garnish with coriander leaves.
Soya upma is ready..
